Dexterity determines ranged weapon damage and is required for bows, crossbows and specialized one-handed weapons like rapiers. Ranged damage is calculated as weapon damage + dexterity - enemy armor. Also unlocks pickpocketing and lockpicking talents, and at 90 points acrobatics is automatically unlocked (allows long jumps). The Master Rapier (60 DEX required, 120 damage) is one of the best one-handed weapons in the game. LP cost scales in thresholds: 1 LP/point up to 29, 2 LP from 30-59, 3 LP from 60-89, 4 LP from 90-119, 5 LP from 120+. Tip: save permanent bonuses (Goblin Berries, stone tablets, potions) for when LP costs are high (60+ dexterity). A DEX build is especially strong for beginners in the addon world since ranged combat saves healing potions and pickpocketing grants extra XP.
